Created originally for pheasant and partridge, this spice blend has actually become a kitchen staple and one of our most versatile spice blends. The balance of spice (aleppo pepper - slightly more floral, and ancho- to bring the kick) sits alongside juniper, pink peppercorn and the citrus zing of dried orange peel. It pairs just as well with pork, pigeon and venison as it does sweet potato and cauliflower. Use as a dry rub on meats or mix with olive oil to douse your veggies in.
